Needing a snack to get you through? Why not try bake a batch of muffins for the busy week ahead. Add one or two extra ingredients for a more filling snack.
1 cup SR Flour – (Alternative: Wholemeal, Almond, Coconut flour)
1 cup milk – (Alternative: Almond, Soya, Coconut milk)
1 cup tasty cheese – (Alternative: Low-fat, fruit)
salt & pepper.
- Mix all ingredients in one bowl.
- Spoon into muffin papers/tins.
- Bake in moderate (180) oven for 12-15 minutes.
- Best served warm. Reheat in the microwave for 10 seconds.
